What You Need

  • Raw, unfiltered honey — the most important ingredient. Processed honey has been heated and filtered, destroying the enzymes and much of the antimicrobial activity. Use raw honey from a trusted source.
  • Fresh garlic — 1 full head, cloves separated, lightly crushed
  • Fresh ginger — a generous thumb-sized piece, sliced thin
  • Fresh oregano — 2 tablespoons
  • Fresh Cuban oregano — 2 tablespoons (or substitute with additional oregano if unavailable)
  • Fresh thyme — 2 tablespoons
  • One wide-mouth glass jar — cleaned and completely dry
  • A wooden spoon — never metal, which accelerates oxidation and degrades honey's enzyme systems

Instructions

  • Place garlic and ginger in the bottom of the jar — crushing the garlic slightly to begin releasing allicin
  • Add all fresh herbs on top
  • Pour raw honey slowly over everything, ensuring every herb is fully submerged with at least one inch of honey above
  • Stir gently with a wooden spoon, moving from the bottom up
  • Seal loosely — fermentation produces CO2 and a sealed jar can build pressure
  • Leave at room temperature, away from direct light
  • Stir or turn the jar once daily for the first week
  • Ready to use after 1–2 weeks — the honey will have darkened, thinned slightly, and taken on a rich, complex herbal aroma
  • Keeps for 6–12 months at room temperature — the antimicrobial environment of honey prevents spoilage
